Leftover biscuits and gravy with a couple of sunny-side-up eggs, or corned beef hash with a couple of over-easies. Could do that a couple of times a week.

At least once a week we do fried egg sandwiches with bacon and hash browns for dinner.
 
Oh heck yes. Maybe once a week.
Usually a couple of large brown farm eggs over easy - wheat toast with grape jelly - a couple of small link sausages and white milk!
 
Makes for a great LATE dinner, say at 2AM after a long night on the town....

My Dad makes the best pancakes, from scratch. But I don't care if I ever eat another pancake because when we were kids and Mom couldn't be there to make supper...guess what we ate....
 
Just ate a half a slice of left over pizza (5:15 a.m.). One of my fondest memories is the first time my wife and I slept together we were just friends and that's all we did was sleep... seems at the conference all the others had hooked up and that hotel room and bed was all that was left. Anyway, the next morning we had left over pizza for breakfast. But I will say I don't understand the big fascination with pepperoni on a pizza... give me Italian sausage any day over that dried out over spiced hunks of old meat.

Our ROMEO Club meets for "brunch" at our local Waffle House once a week. My usual is two over medium on a big pile of hash browns accompanied by three big strips of bacon and whole wheat toast! I'm not the only one who does this combo, and our waiter just asks "Who gets the regular?" 🤣

Eggs, fried if the cook is first team, bacon, fried potatoes and thick sliced tomatoes. Excellent plan any time, breakfast, lunch or dinner.
 
At the store I get a couple loaves of Italian or French bread...W/Spaghetti or Lasagna...The next night bacon eggs if wanted and French Toast made with the left over bread. Nothing like it...in fact tomorrow for sure...I don't even have to squeeze the chickens for the eggs...Maybe just me but there is nothing like the sweet FT and the salty bacon
