What's for dinner?

We are having leftovers. Smoked turkey breast, homemade stuffing, cranberry sauce that a diabetic can eat, and wife's (sort of) famous broccoli salad, also referred to by some as bacon salad. Thanksgiving meal redo!!!! Love smoked meat! We are having a double smoked (2nd time by me) spiral sliced ham for Christmas, and in between we are planning on ribs at least once.

We have a propane smoker and use wood chunks, mostly apple. New smoker and Thermo Pro makes it easier and better than ever. I don't have to sit outside and watch the temps anymore, kick back in the recliner and read Ruger Forum until it is done!
 
Normally, I would have had Turkey for T-Day, but I made a Mexican cornbread with shredded chicken, cheese and diced green chiles. I also had chicken, cheese, green chile enchiladas. Apple pie for desert. Leftovers: spread butter over it and re-heat. Goes great with a Micheloeb Ultra ZERO non-alcoholic beer.
 
Smoked turkey is the best! I'm intrigued by "Broccoli Salad AKA Bacon Salad" sound fantastic.

Not many left overs this year as we only cooked for two.

Saw a bizarre segment on FOX on what to do with left over stuffing......mix it with eggs and make waffles......you know what....it isn't too bad covered in gravy or hot honey and a new way of getting rid of left overs!

I hate to say this, but I do like turd does. I use the butter and garlic cajun injector. It helps keep the turkey moist. I also put it in one of those plastic baking bags. Didn’t have any complaints at all.
I don’t know what’s for dinner tonight because my granddaughter called and said I was coming to their house for dinner. So I guess it’ll be granddaughter surprise.

We're having a full turkey and dressing dinner Thursday because we want to. Just making a breast though because it's for four people. The big bird we made last week was 22 pounds and we've found that brining them for days before and a certain way to bake them make them very juicy. I have become the dressing maker.
 
Leftovers here... a couple of cheddar jalapeno brats; a container of wild rice and venison burger soup; and a big, fat mayo, meatloaf, and ketchup sandwich that I let my wife take a bit from where she proceeded to cherry pick the BEST bite right out of the middle...
 
When you smoke a turkey you need to brine it first. We also inject the turkey when deep frying or air frying. I have used a lot of stuff to inject with. First ones I used crab boil which makes it pretty spicey.

I made a big ole pot of turkey and sausage gumbo and cornbread.
 
I am not a big turkey fan but I often buy a breast for sandwiches. This year I smoked a turkey and it came out really great. I did brine it, stuffed a ton a butter under the skin, put it on my pellet smoker and used a turkey cannon. All that being said, I am really only good for maybe one turkey leftover meal. Then I don’t want to see it again. I while happily eat all the other side dishes several times.
