They are out there.
It is difficult to find 7.5" Vaqueros in some chamberings, e.g. 44Mag comes to mind, but the 45 Colt should be one of the more plentiful ones. A lot of the CAS/SASS shooters prefer shorter barrels, and many have been moving to 38/357 because of ammo/components costs lately or competitiveness or they like the smaller New Vaqueros. Case colored models are probably more common than SS.
I have a 7.5" high polish stainless one in 45 Colt and it is one of my favorites among a lot of Vaqueros. I call it the "Matt Dillon". Was just out shooting it yesterday and it is easy to shoot and very accurate. Plus, you can stuff the Vaquero up with "Ruger Only" loads if you want, not so the New Vaquero.
All I can say is check your local gun store that caters to CAS/SASS shooters or perhaps the online auction sites. There may be less of them being traded in now for New Vaqueros than before, but they still show up pretty often.
