Might as well get some canned pig brains to go with it. Really tasty with some grits and scrambled eggs.

Lake Country Meats in Cleveland Ok makes their own and yesterday I cut some 1/4" thick slices and air fried them for breakfast, pretty tasty
Every time I'm up that way, I always stop at the creamery for an icecream , then hit the outlet store for a package or two of peperoni sticks or jerky.
There used to be a place near Pella Iowa (very 'Dutchy' area) that made very tasty 'summer sausage' (rolls about 2 1/2-3" diameter) and 'ring bologna' about 1-1 1/2" and tied in a circle (hence the name). The summer sausage was a bit 'wetter', had more visible fat, and a milder flavor. The ring bologna was drier, finer texture, and often spicier.
For several years we'd remove the backstraps and the better parts of the hind quarters from deer and take the remainder of the boned out meat to this place to have made into some of each. Seldom had much left by spring. It got pretty pricey and we just quit doing that.

Lots of Germans and lots of hunters up here so there's all manner of sausage, summer sausage, and jerky available for purchase or as a gift. Deer and wild hog is most common.
I grew up on Slim Jims.... but as noted those are not what most of us would consider Summer Sausage.... I've always found what I consider Summer Sausage a little mild for me. But I'm more of a breakfast sausage guy now that I stopped eating bacon.
I had a neighbor years ago that went hunting a lot when it was pheasant season he made the best I ever had sausage out of pheasant man they were tasty on the grill

And these are Delicious! They have a bite and some good texture. Not too sweet and not an overpowering Teriyaki flavor

Just before the November-December holidays, Hickory Farms opens a shop that sells different flavored cheeses and mustard-like sauces and summer sausage, but the best of all is the Turkey Sausage, because it is sweet tasting. I would send it over to my son when he was in Afghanistan and since they all shared their "CARE" packages from home, his buddies liked the turkey sausage best of all!
This sausage is really popular in the southern United States. It's called "head cheese" basically clear gelatin with pig head pieces floating in it. I'm not sure if it can be fried.
Fatties are now my favourite meaty chewy, but be sure its pink. They get brown, and then grey, at some of these truckerstops. I, too, grew up on slender james'.
