New Mexico

Follow I 44 (old Route 66) east, I 25 north, then work your way east to the Capulin volcano, back to Raton and the NRA center. Down through Taos, over to Chama, and follow the 2 lanes as far west as you want.
We did most of this loop last year (minus the I 44 part since we came from the Midwest).

Santa Fe has some good restaurants. And it's between Albuquerque and Taos.

Oh! And also there is a breakfast diner in Las Vegas, NM. And if you are going that way, the road between Las Vegas and Roswell is one of the prettiest highways around. You might see 5 cars in the 100 miles or so.
 
In Santa Fe go see the Church at Loretto, in Albuquerque go ride the Sandia tramway ( its awesome!) in Carlsbad : gotta go see the caverns, Go to White Sands north of El Paso ( Alamogordo) and see the Organ mountains near Las Cruces.

Mobuck is referencing I-40, I-44 is in NE Oklahoma. Not knowing the composition of your party or your preferred activities, some high points are: National Museum of Nuclear Science, Sadie's and La Salita in ABQ; Bandelier, Old Square, O'Keefe museum in Santa Fe; Valle Caldera up by Los Alamos; White Sands and NM Space Museum in Alamogordo; Chaco Canyon up in Four Corners area. Haven't been to Carlsbad yet, that area is full of tourist traffic and you may need to do bookings before just showing up.

If you're coming from CA and expecting a CA-type cultural/entertainment/landmark experience, you'll probably be disappointed. The main attraction of NM is outdoor activities in the absence of large groups of people.
 
If you happen to be going into NE New Mexico,, there is the NRA Whittington Center in Raton. Their museum, and ranges are worth the visit.
But I found that a little town about 30 miles away from there very fascinating. In Cimarron, NM. there are a couple of places that have a lot of old west REAL history.
The St. James Hotel,, a MUST visit if there,, where there are still bullet holes in the ceiling, and several famous & some infamous types stays, had killings etc. The history of the place is outstanding.
And also in Cimarron is the Old Mill Museum. Again,, lots of old west history that isn't "Hollyweird" crap.
