Hot sauce

Looks like this is our annual hot sauce thread...🤔
As previously mentioned, I love the stuff...Extra Extra Extra HOT please.
I put it on numerous foods. Don't necessarily want it on everything.
No. It doesn't bother me. Going in...OR coming out.
I too grow my own peppers, including Super Hots, and make my own sauces and dried powders each Fall. And have for 40 years now.
I prefer a simple Louisiana style sauce, just peppers, vinegar and salt.
In the rare instance that I purchase hot sauce, my favorite is El Yucateco XXXTRA Hot, or just plain old Sriracha or Tabasco (especially on eggs.)
Life is short, and bland food is incredibly boring...😴

Had a small incident in Thailand/Siam. Mushroom soup. Ice cream for dessert. Standing in the shower waiting and wishing on the Ice Cream. Those little peppers made fire coming out. YMMV.
 
In life I've learned that...

Any hot sauce is better than none.
New Orleans is (or was) a Mecca for hot sauce lovers.
Asian and Spanish food stores offer GREAT sauces not available in local supermarkets at half the price.
If it's too hot, use less.
Don't confuse heat and flavor.
I never had hot sauce go bad in the fridge.
Hot sauce can be used on eggs, hot dogs, fish and more,
A #5 dish in a Thai restaurant will burn TWICE!

True storys...

Hitch hiking on I-10 across the U.S after my discharge in the 60's I stopped in a little place that had a big sign that read, "Best Chili in Texas" So I stopped in and sat at the bar. I asked a few questions with my New York upstate country accent and ordered a "bowl of red". The counter guy asked mockingly "would you like that mild"?

I said no, make it hot and I'll take a bottle of beer.

I started eating and he asked "how's the red"? and I said it's the best chili I ever art and he said...

Son, in Texas you're not a man by how much money you have and son you're not a man by how many ladies you take to bed, son in TEXAS you're a man on how hot you take your chili, the beer is on me!

In Mexico driving from Acapulco to Mexico city I found situated in a dirt parking low with mule hitching posts a large restaurant. I ordered a "sampler" and when it came I asked for hot sauce and the waiter said "Senor, the food is pretty hot" and I said it was OK I'd like some sauces.

The waited and cooks watched me from behind the counter and after I splashed some on my food and started eating, the waiter and coks APPLAUDED me!

Some people really appreciate their cuisine!
 
Well I still make a Trail Drive Chilli. Cubed beef, wild onions, and at least six peppers picked on the trail. Covered with yesterday's coffee, and stewed until it's able to be chewed by folks without teeth. It's a man's man chilli. Folks from Texas ain't that manly anymore. But isn't that how things go? 🤔
 
gnappi, have you seen the youtube/or on line talk show "hot ones"?

If not, it's an interviewer with very good questions I might ad, that interviews stars while having 10 hot wings that get progressively hotter. it's a hoot to watch. A ton of big names have taken the challenge.

Warning: the heat will usually bring out a boat load of profanity in some cases.

On that show milk & water is provided along with what ever the guest request. Dave Grohl, singer for the Foo Fighters , drummer for Nirvana requested the host have a shot with him between wings & brought the bourbon. But playfully, having a drink of milk before it's over shows weakness. They have a barf bucket at hand as well.

Louisiana is default here. But I have rooster sauce as well (Huy Fong). Cholula is another stocked item.

I never liked habanero, all heat no flavor. I'd sooner stick a BIC lighter in my mouth and pull the trigger than use habanero

My favorite spicy BBQ sauce has been Portland 1866 Fire Sauce from the Elsmere Grill, but they went out of business... It was a slightly sweet, crimson BBQ-style hot sauce that went well with their pulled pork. Now I'm stuck with Jack Daniel's Sweet & Spicy BBQ Sauce...

The problem I have with almost all of the hot sauces, is that they are vinegar based. And that vinegar can overpower the flavor. Here's a couple to try if you're tired of vinegar. I have branched out into just about every direction. I love the mustard based one on things like hot dogs. The grapefruit based one goes on things like shrimp or fish really well. On hot ones TV show they always have one of the 3 Da Bomb's which are consistently in the top 10 of the world's hottest sauces. I keep the middle one as my main sauce on hand and go through a bottle in 3 months or so. Just a few drops in a bowl of ramen will keep you lips burning with that nice mellow endorphin rush for hours. I am obviously physically addicted to this stuff!

To the guys who say they can't see why anyone wants that much heat- it's definitely a tolerance thing. Take 2 bottles of the hottest, best tasting sauce you can find and use them up. You will be craving the next step just like any addict.

years ago this was vying for the hottest sauce in the world. Now it's not but very few buy it except to prank their friends. I've had the source and satans blood which are almost pure capsaicin but you have to drop back to this if you want flavor not just heat.
This one's perfect to heat up soup without covering up the original flavor also a few drops in your chili. The chili will taste pretty much the same but the heat will melt your face! Have fun! Light habinero flavor. Extreme heat!
 
Mt step daughter and her husband left a bottle of Chalula when they went back home and said I could finish it. I did just that a while back but really didn't care for it all that much and actually almost threw it out.

I like Tobasco on my eggs and when I go to someplace like Denny's and get hash browns and eggs it grab the Tobasco sauce bottle.

When I make pasta, I get a bottle of Walmarts cheack sauce with mweat, not that I ever saw any meat in it bit tale that, fry up about a pound of burger and ad to the sauce and sprinkle about a tablespoon, some times a bit more andd stir the sauce, burger and flakes and have a five pasta meal.

I'll run those pepper flakes on scrambled eggs as well but that's about all the times I use hot stuff.

Interesting side note. The Tobasco is a pepper variety. But they somehow got a trade mark on it. So if another hot sauce uses Tobasco peppers, they can’t say so. Stupid lawyers!
Here is another cool bit of Tabasco trivia.

According to the Mcilhenny Company archives, in 1869 McIlhenny bottled his first batch of aged sauce in new cologne bottles with shaker spouts and then sent the bottles as samples to likely wholesalers.

McIlhenny grew his first commercial crop in 1868, but sold no Tabasco sauce until 1869, when he sent 658 new cologne bottles filled with his condiment to market. And we know from McIlhennys meticulous business records that the domestic popularity of Tabasco sauce grew slowly over a decade or more, and didn't successfully export to Europe until the late 1870s.”
 
Clearly, no one has been to Austin, Texas for their Hot Sauce Festival. Truly an amazing experience! I tried the Carolina Reaper on a toothpick, as a sauce, on my tongue. Sent back of the throat, and yes, it was nuclear. Watched another guy put it on the tip of his tongue, and OMG, I never laughed so hard when he went full-bore crazy! snot, puke, it was f'ing hilarious!

Thinking too much of anything is pretty much ridiculous. In any venue , genre or whatever,,, is way over done.

In the game for the fun & pleasure, not to prove something or even take a challenge.

I once took a shot of double tavarski vodka at the urging of an older friend. That, like nuclear hot wings is simply dumb IMO. The vodka was 160 proof & my throat was sore for a day or 2. Just stupid macho crap.

Their website doesn't have any entry information, but it is more promising than anything I came up with. I was looking for something like a state fair competition, and everything within 500 miles wanted UPC coded products made in a commercial kitchen with health department inspection. Basically competition open only to those ready to put their product on the shelf of a grocery store. That one in Austin says "individuals". The judging before the event would mean they want a quantity submitted before the festival to provide to professional judges.

@M118LR, lawn mowers are supposed to be for cutting grass, but there is a thing called "lawn mower racing", and they don't even have blades on the mowers when they run around the track.

Trying to come up with the hottest pepper or sauce is the Tool Time More Power version of food.

Fun way to do something really insane:
Chop the hottest peppers you can find up, put them in a jar, and submerge them in Everclear. Shake occasionally and wait until the alcohol turns red. Pour the liquid into a cup and let the alcohol evaporate out. The oil that is remains is pepper extract: concentrated liquid fire. But it's prohibited from use in most hot sauce competitions.
 
the one in the middle is straight capsaicin. haven't dared to open it yet. pretty sure I would suit up.

My mother would brew cayenne pepper in hot water like tea. Then bottle and refrigerate it.

You could sip it, or use it in recipes. Like a hot sauce, but no vinegar.
