You used to be able to find good knives at the thrift store. In the past I’ve found a Schrade knife with gut hook, and some various name brand kitchen knives.
But not anymore it seems. I don’t know why. Probably because people are wising up about donating for free anything of value.
Anyway, here is a nice Japanese knife I found at the thrift store a long long time ago.
I’ve used it, but not that much. I think I prefer kitchen knives with really thin blades. This one is kind of thick.
But I just sharpened it. The Wicked Edge does an amazing job of getting a very straight And even bevel on the blade. It’s my favorite sharpening system. I tried to get a good picture of the blade’s edge. It must be an 8” blade. I don’t have a ruler handy but it might be 7”.
I’m not sure if I like the handle design or not. That finger hook style. It’s different, that’s for sure.
But man oh man, it’s sharp now!
