Looks like awesome TX bbq and as always great pics.
I had a flashback this past holiday weekend to my days living in Texas (Victoria, TX area) and told the family I was going to cook up some bbq. End result was some brisket, ribs and venison sausage ; jalapeno peppers on the side with my wife's great potato salad and corn on the cob. It doesn't get any better than that...
Glad you remember where your roots are  Do you have a hard time finding Brisket in PA?? Son did in VA and WA.

Finding the Brisket can be a challenge - most shops here over trim the fat, going for that lean meat market, but if you know how to talk to the butcher on specifically what you want it works out pretty well. A lot of the brisket market here is for corned beef - very different! The biggest challenge is the venison sausage - I'm going to have to start making my own as the shops in this area just don't do it the same as Texas style...
