I want to put an Ultra Dot 30mm red dot sight on a SRH 7 1/2'' bbl. Can anyone tell me what height rings to use, low or medium? Also, do you think the Ultra Dot will hold up to the .44 Magnum?

Not sure about the rings as my SRH came used with rings included, but I've had Ultradots on a 44 Mag SuperRedhawk for a couple of years without problem. Also have them slide mounted to a couple of 1911 guns for shooting NRA bullseye matches and have had 0 problems over 10 years for those.

For the 30mm UD using Ruger oem rings, you'll need 1 medium and one high. No low avail in 30 mm unless you go Warne who makes a low and add amatching low but would need a base mount like Weigand if you do.

I'm using a Burris base mount for their Fastfire II on my 480 SRH (see that there is a III waiting in the wings) open style but haven't an opinion yet. My other 454 SRH hosts an 30mm UD in the aforementioned warne/weigand setup

The Ultradot will definitely hold up to a 44 Mag. I've got an Ultradot on my 454 and 480 Ruger SRH's:
