Viewing this clip, I felt a disturbance in the Force. As if a million Cajuns cried out in outrage and horror, and then were silenced.

And a roux is something you make before you start cooking. You don’t make roux by dumping flour on the finished dish. Gumbo takes a dark roux.
 
Gumbo starts with a base of oil and flour. The flour is "scorched" but not burnt to several levels of flavor. Light brown in color to dark, depending on your tastes. This is the roux (pronounced roo).
To this is added onion,celery,bell pepper, and whatever the local tradition holds. Chicken seafood sausage added. It is a thin "soup" served with rice (cooked separately)and potato salad, again what local tradition holds.
"mekkin" a gumbo is common occurrence in a southern home and SERIOUS business in Louisiana.
 
That looked and sounded like a total idiot scam .... it ain't gumbo. This coming Monday has been declared Stumpwater National Gumbo Week (by me - the mayor of Stumpwater), which only comes around a couple of times a month, and I will be cooking my usual 1-1/2 to 2 gallon batch. I think this will be either batch number 22 or batch 23 for this year. I can guarantee there is absolutely NOTHING in that video that resembles gumbo except for some of the components. I eat a lot of gumbo.
