I know that the new GP-100's and Super Redhawk's come with the rubber grips and the wood insert. The older Redhawks used to come with standard wood grips. Did the GP-100 ever come with wood grips, or was it always decked out in rubber? If it did, are any of the older grips still available and would they fit a modern GP-100 and Super Redhawk?

The first GP-100's had a rubber grip with wood inserts. It wasn't that long ago that Ruger switched to an all-rubber grip.

All wood grips were an option for a short length of time. These were made by, I believe, Letts for Ruger. The size and shape was essentially a duplicate of the rubber grips that had the insert.
