Baconing again.

Finishing up some stuff from yesterday, and getting the last of this batch of pork belly into the smoker.


Slicing some Green Chili bacon...

A little over four pounds of Green Chili bacon...

Seven pounds of Cayenne bacon waiting to go into the smoker...

And now that this batch is finishing up, I have to figure out what my next project is. I may try making some Canadian bacon...

I am curing one whole side right now. Should be ready to smoke tomorrow. I will try and post a picture or two. The immediate family sure look forward to smoking Saturdays.

Wow! That looks good. Never thought of spicy bacon but its my favorite things put together so I bet its wonderful.
