Finishing up some stuff from yesterday, and getting the last of this batch of pork belly into the smoker.

And now that this batch is finishing up, I have to figure out what my next project is. I may try making some Canadian bacon...

Wow! That looks good. Never thought of spicy bacon but its my favorite things put together so I bet its wonderful.
