One of the ones that I really found interesting because of the methodology and motivations was by Ant Anstead- he and I look at things in much the same way.
Ant Anstead Master Mechanic (2019-2020) was the name of the show. I had to resort to Google to get the correct show name, and it appears he has another series in which he restore vehicles.

It looks like his new show revolves around restoring vehicles to flip to get funds for a massive home renovation. I’ll have to check that out.
As for Gas Monkey Garage, Counting Cars, and the like- I rather enjoy the over the top personalities even though some of the “drama” gets tedious. What I really dislike is the imposed time crunch that some of these shows use. When I had my own shop, I would make it clear up front that I set the completion date.
