what do you use to polish the stainless steel? are there certain gun cleaning polish or will any stainless polish do?

Bill, I use Mothers Mag Polish. Can be found at Auto Zone or other auto supply stores. A bottle will last you forever. Another product to look into is Flitz.
 
I have a RH in satin stainless. I want to keep it satin, so I use the lead remover cloths. They remove powder residue without messing with the satin finish. If you want to really polish as opposed to clean, then Mother's or Flitz will do that. If you want to keep it satin, then don't use a polish.
 
All you need to do is clean with powder solvent, oil the mechanism and wipe down the gun with an oily rag. To remove the powder stains and carbon build-up on a stainless gun you can use solvent and a bronze brush or a "Lead Away' cloth. You can buff the surface with a 'Scotch Brite' pad and return the gun to a factory finish. :D

I had some bad scratches on my Alaskan and Colt 1911 Stainless steel and I used 600 grit sandpaper to get them out and then a jewelers polish to polish them out, can't tell the scratches were even there. That is the good thing about stainless steel, don't be affraid to try it.
