Smoking salmon

Smokin' some salmon for the weekend. Brined, dried, seasoned and into the smoker. Apple wood chunks for the base and cherry wood chips to finish. Halfway there...and my 2 resident red tail hawks watching over me.

What type of Salmon are you smoking? In the past I have smoked Sockeye which is the only type of Salmon I buy. I have caught Chum and King which are good also.

Delicious! Salmon is fairly easy to smoke. What spices do you use? I usually add some brown sugar.
Brined in water, brown sugar and course Kosher sea salt for 8 to 10 hours. Dried for 4 hours. Seasoned with fresh lemon juice, course ground black pepper, lemon pepper, LOTS of fresh dill from my spice garden and just a touch of garlic.

Smoked for 2 to 3 hours in an offset barrel-type smoker at 200°, using apple and cherry wood chunks and soaked chips. Maintaining the temp. at 200° is the tricky part, but I've developed a method after much experimenting. Smoked 15 pounds yesterday, doing another 15 pounds today.

Jim, this time I'm smoking wild caught Atlantic salmon. A bit pricey at $13.99 a pound but well worth it. I charge my friends $60 for 3 pounds, which covers the cost of the fish, brine and fuel, with usually enough extra dollars left to pay for a filet or two for me, depending on how much has been requested. I work cheap!

By the way, I've fished out of the Venice Marina many times back in the day. Nice tuna your grandson has there!
 
I love salmon smoked with a blend of oak and mesquite. Nita's favorite, too. When she gets home..................

I use Lawry's Seasoning salt and coarse ground black pepper.

Ken, I half expected you to pull up on your Harley while I was tending the coals! Last time you stopped by it was rainbow trout in the smoker, wasn't it?
Yes, it was rainbow trout, and it was simply amazing! You even gave me some for the road. I believe you caught it in your favorite fishing hole you mentioned to me.

With fuel prices as they are I might be back west on the same bike, but this time I'll avoid the summer heat and do it around Sept/Oct. Some more smoked fish would be great!

Forgive my ignorance, but I thought the term "Atlantic salmon" refers to farmed salmon? How can they be both wild and farmed? Don't tell me when you refer to Atlantic salmon, they just refer that they came from the Atlantic Ocean!
I thought salmon from the north Pacific were the best, though with the way the Pacific is polluted, that is now questionalble.
 
I used to buy wild caught salmon, smoked around 250-300*F using hickory chips. Went real good on triscuits and wheat thins. FWIW Jim, your salmon looks tasty!

Nope Atlantic Salmon live in the right side waters of the U. S. not one of the 5 that live in the left side waters. They are still wild ones along with a bunch of farm raised ones.
As the supply of A S diminished they started farming them. It is illegal to keep wild caught A S in the U.S.

Commercial and recreational fishing of wild Atlantic salmon is prohibited in the United States.[5] Several populations of Atlantic salmon are in serious decline, and are listed as endangered under the Endangered Species Act (ESA). Currently, runs of 11 rivers in Maine are on the list – Kennebec, Androscoggin, Penobscot, Sheepscot, Ducktrap, Cove Brook, Pleasant, Narraguagus, Machias, East Machias and Dennys. The Penobscot River is the "anchor river" for Atlantic salmon populations in the US. Returning fish in 2008 were around 2,000, more than double the 2007 return of 940.
