Are Hogue and Pachmayr my only choices? Or does someone else out there make decent rubber grips?

Uncle Mikes/Butler Creek? No longer made but you might find some on ebay, gunbroker, etc.
I have the Hogue Bantam rubber grips on mine. It had the full-size Hogues on it when I bought it. I didn't like the looks (shot very nicely, however!) so I bought the Bantams and have been happy with them.

Not the best pic in the world but these Uncle Mikes fit me fine. Not sure they're made anymore but you might try Numrich.
You wanting something to cover the back-strap and absorb recoil?

I have tried them all (literally) and the bantam Hogues are the best in my hand.
