Well, Being retired, 74 years old and depending on SS and a small pension from a company I last worked for in 1979; I find it hard to buy Christmas presents ; SO:
I spent Sunday making the "Traditional" Nestles Chocolate Chip Tollhouse Cookies (SIX DOZEN) and then packed a dozen into separate Ziplock Freezer bags after addressing one each for my Kids, Ex, Ex daughter in law, and Grand daughter. We drove up to Orlando Monday and I dropped them off at my ex's house knowing. they would all show up there SOMETIME this week. I included a Christmas Card addressed to ALL of them and signed in LOVE from me.
Nothin' Says "luvin" like something from the oven and Choc Chip Cookies say it best !!

So, Today, I baked up a smaller batch but this I made into Nestles Choc Chip Tollhouse cookie bars for me and my spouse Ashley.
I gonna have to diet after the first of the year !!!! :shock: :shock: :shock: :roll: :roll: :roll: :roll: :roll: :roll:
Say, anybody got advice on roasting a DUCK ??
 
OK, on the duck... First place it in a container that will hold it and a wrapping of newspaper. Place in freezer. Remove from freezer after it is frozen solid. Ship to my address which I will PM you. :roll: :roll: :D
 
Best duck I've ever had was stuffed with a red paving brick and slow roasted until you could stick a fork in the brick. Remove from oven and throw the duck away and enjoy the brick.

We used to have roast duck every Christmas at home. Incredible! Roast like a turkey...get one of those roasting bags. Serve with orange sauce.

Recipe for orange sauce:
Frozen OJ
Tart jelly like plum preserves
Tabasco to taste
Ground ginger to taste

Heat all together on the stovetop. Serve warm. Duck is so so good. But a brick? That's a joke right?

You never knew anybody named "Ashley" ?? Strange in High School in BOth Oklahoma and Portland Oregon I knew both Males and females named Ashley. How about Averill or is it Averil ?? Yeah that was my litlle brothers MIDDLE NAME, placed there by mom and dad to honor Dad's sister.
So off you go "spanky", back to "Our Gang" and Alfalfa.

We raised duck. We would clean per usual, I hate plucking, so skinned instead. Stuffed with pre cooked oatmeal that we chopped apples into, and added a bunch of cinnamon to taste. Placed on a rack in a roasting pan. Cook on 400 degrees F for 45 minutes. Basted every 10-15 minutes with butter ( melted, with orange juice, and cinnamon added). Then Broiled on 500 degrees until brown ( about 10 minutes plus or minus). Good luck. :)

Thanks Kevin; I'll go with the roasting bag, I have a box full I bought for Thanksgiving Turkeys and then discovered that a turkey LASTS too long for TWO of us, so NOW we go out instead. BUT the duck was on sale at Publix and roped me in; Haven't had roast duck since I was in the 5th grade.
 
I hate saurkraut, but when Dad brought home ducks, Mom would clean them, stuff them with kraut, and put them in the oven. When done, the kraut had turned black and was thrown out. It pulled out the gamey taste, and the duck was delicious.
 
Stuff the cavity with apple and sweet onion wedges, place in double-thick aluminum foil, add 1/2 to 3/4 cup of cheap white wine, seal up the aluminum foil and poke one tiny hole to vent it. 350 degrees for 1-1/2 to 2 hours.

All of my recipes, of course, start with "marinate the chef"..... your choice of marinade.

Never saw or read Gone With the Wind, eh? ;) Ashley Wilkes played by Leslie Howard, who was one of Scarlett's love interests. Actually, Ashley was Wilkes' middle name, but that was the name he went by. His given 1st name was George.

And the irony is that Leslie is yet another name that many people associate with females exclusively.

I've only eaten duck about 4 times in my life, which was about 3 times too many!
I'd suggest fasting for about a week before eating it.
Anything that needs that much "help" in preparation (seasoning, stuffing, marinating etc )
to be palatable ought to be fed to the dog.
I've never even seen Bear Grylls eat a duck.....
