last California Salmon I had was at Deetgen's at Big Sur, we watched our chef surf some beautiful waves around the rocks at Pfeiffer Beach earlier that day. He did a oak grilled salmon with a white zinfandel wine drizzle that was really awsome, roasted garlic spread, hot pumpernickle bread, steamed romanesco broccoli....man I have got to get back there
 
I used to fly fish the Yuba River under the Hwy 20 bridge. During the spawn you could fish downstream of the bridge. Well, a few Chinook would spawn downstream also. Sure is fun trying to catch rainbows/steelhead while 30-50 pound salmon swim by and sometimes swim right into you. The trout would sit right in your eddy and rest.

Bad part was the locals showing their "lures": a 1-1 1/2 sinker just above a giant treble hook. They'd ties a few feathers on it and it became a lure. Amazing how many of their fish were foul-hooked in the cheeks or forehead. They did let the ones hooked in the back go--too afraid of the ticket, I guess.

Miss fishing for small trout up by Downieville, hunting the forebay for pheasant, and all the quail in the foothills.
 
Take a good smoked salmon, add some diced green onion tops, mix with cream cheese and salt, pepper, garlic to taste, a dash of Tabasco ans Worcestershire. serve on a good thin cracker (such as Carr's).
