Some folks will know what this is. For those that don't, Eskimo Candy is a hard smoked salmon that is very sweet. Every year I look forward to receiving a pound or so for Xmas from one of my relatives in the PNW. This years gift arrived today and I've already eaten about half of it, and sealed up the rest for later. :D

You have no idea, if you've never tried any. I'd take this over any chocolate or other sweet any day. The stuff is addictive. :mrgreen:

Sorry, I don't know of any retail outlet. My uncle catches and smokes what he sends me. You might be able to find someplace in the PNW around Seattle, BC or Alaska. Maybe a store in the Pike Place Market in Seattle - http://www.pikeplacemarket.org/

If you can get a decent King or other Pacific salmon air freight fresh, it's basically a fish jerky. A few recipes on line. Fillet and cut it into 1/2" -3/4" or so thick strips about 2" wide after scaling. Leave the skin on. Soak in a salt brine for a day, drain well for a couple hours, then smoke, skin down (apple wood works well). Brush with a thin honey sauce every couple hours for about 8hrs or more. It will last for 2 or 3 weeks depending on the weather and the remaining moisture in the fish, without refrigeration if sealed up. The drier it is the longer it lasts. You may have to experiment some.

It's a very high protein, high energy trail food that has been in use for centuries.

My pal in British Columbia introduced me to that stuff. He called it "Sea Candy". I've spent years trying to duplicate it on my smoker. I get close, but never as good as what I enjoyed up in B.C. You've got my mouth watering.

Traveled to the store last night and got three very large Salmon filets. In the brine today and tomorrow I will cold smoke for several hours. Then the wife will vacuum pack.
Her brine is a recipe that she worked out that has some brown sugar and spice in it. Smoke with oak and hickory.


We do this every Christmas. She will make cookies and home made candy, and along with the packaged salmon, make up baskets for our neighbors and friends. In turn they all bake cookies and candy which they distribute to all of us. This has been going on around the lake for years.

Well, I smoked six very large salmon filets this afternoon and they came out great. I intended to do the honey thing on a couple but as it turned out they kept me pretty busy and I didn't get to it. They are already vacuum packed and ready for Christmas baskets.

When the salmon was finished I threw a rack of ribs on the smoker and we had them for dinner tonight. Really good.
