Ejection question

Is it possible to adjust the angle that a 1911 is ejecting empties?

Depends a lot on how much you need or want to change the angle of ejection. Shortening the ejector itself will change the angle the spent brass is thrown, but it's trial and error for most of us....

Why exactly do you need to change the angle? Lefty shooter? Just curious....

That's a very simple fix for a qualified gunsmith. If your pistol is a Ruger SR1911, I would suggest that you contact them to send yours back for adjustment. If there's a gunsmith in your area that you trust, let him do it. The cost would be minimal for this adjustment.
