Chicken and dumplings

Since Bob Wright brought up sausage and biscuits, and not wanting to hijack his thread. I LOVE CHICKEN AND DUMPLINGS! I have cooked them a multitude of ways . Now that I live alone, getting them from a can works. Sweet Sue is my favorite-just not enough chicken. Quickly remedied with a 5 oz can of water packed chicken or chopping up roast chicken into it along with black pepper just before nuking.

Semi-homemade chicken and dumplings. Really easy, and really good:

Put some chicken parts, or even a whole chicken, in a pot, and put in just enough cold water to cover the chicken. Add some salt and black pepper. Bring the pot to a boil, skim if you feel like it, turn down the heat and simmer until the checken is falling off the bone.

Remove the chicken from the pot and set it aside to cool for a bit.

Taste the broth in the pot, and season with more salt and pepper if it needs it. Open two small cans of Pillsbury buttermilk biscuits (three if you're making a big batch). Cut most of the biscuit up into thirds. Cut two or three of them into small pieces (they help thicken the broth). Throw all the biscuits in the broth, turn up the heat and bring it to a boil. Reduce heat and simmer for awhile. The biscuit pieces turn into dumplings.

Take the chicken meat off the bones, and cube it up. A few minutes before it's time to eat, put the meat in with the dumplings and warm it up. If you like cream or half & half in your chicken 'n dumplings, add it at the end.

Sit down and eat. :)

Note: if you make too much, it freezes well.
Another note: if you live in the south, Mary B's frozen dumplings are good, too.

When I was at Da Nang AB during the late unpleasantness in SEA, my hootchmate got a care package every other month from his Mom in Atlanta IIRC. Two cans of Sweet Sue chicken and dumplings, two cans of Swanson Chicken Ala King, two cans of (the brand escapes me) chicken breast in water, and two large cans of mushroom slices. We'd stop at the base bakery on the way from work to the hootch at midnight to scrounge a loaf of fresh-baked bread right out of the oven (a real luxury in 'Nam and freely handed out by the cooks), back at the hootch we'd combine one can of each of them in a 3lb coffee can scrounged from the chow hall and heat it over a C-Rat stove, soak up the juices in that fresh bread, and pig out!! We'd have to fight off half the GI's on base once the smell drifted out!
To this day, I'll mix up a batch of that at least once a month for the wife and I, get some good bread or better yet, make some biscuits, and enjoy again - and drift back to the only good memory that I have of that place and time.
 
For lunch there was a bar one block from where I worked that I'd have lunch at almost every day. About once or twice a month the special would be chicken and dumplings. The beertendress didn't even have to ask what I wanted, she knew. It was just some good homemade chicken and dumplings from the bar.
 
I too love GOOD chicken & dumplings. Yet,,, when it comes to biscuits and or dumplings,,, Miss Penny's skills as a cook suffer. She freely admits this. And my biscuits are never the same, and sometimes when I cook them,,, they are good & other times,,, I feel I wasted the effort & all.
So, I too have to either get them at local home cooking type places, or rely upon store bought stuff to whip them up. And it's not often done,,, as Miss Penny isn't a fan of eating chicken & dumplings. Yet she does love chicken.
So when I have a hankering,,, I go to places that have them, or try & make up a store bought pot of it. Now,,, my Mom used to make homemade C&D, and whew was it good.

I picked up and read the label on a can of chicken and dumplings yesterday. Thought to myself "I'd like to have some of that". Then Grouch Attack came along and reminded me of what we were in the store for. Guess if I want some, I'll get a can next time I go to store, heat it up and eat it ALONE.
We used to get chicken and dumplings, chicken ala king, and chicken pot pies right off the production line when my Aunt worked at Banquet Foods. Every week, she'd bring home 1-2 cases and Mom would swap a few packages of hamburger.
 
My mother used to make C&D similar to ditto's, but with several carrots,
celery, onions and a little parsley. Cut up the chicken first, put it on to
boil with the onions, carrots and parsley so everything smelled good while
it cooked. Once the chicken was done, de-bone it and then add the home
made dumplings.

Haven't had that in years. SIGH! :D

After my first divorce, I had an insane urge to kill something. I had an English fighting hen, that produced 3 clutches yearly, and there was an excess of roosters running around. My back yard was grown up as tall as me. I grabbed my only gun, a bolt action, full choked 20ga by Mossberg, and commenced "Redneck Pheasant Hunting." I shot one of those roosters on the rise, and blew its head off. Plucking it was out. I skinned it, gutted it, put it in the pot, and commenced cooking it til done-9 HOURS. I got bored along the way, and did as Pat-in Co described. Used the canned biscuits for the dumplings. Hmm, I might need to poach a chicken? :shock:

Every month or so my wife makes home made chicken & dumplins. She does it in the crock pot, put in the chicken (she uses chicken that she has cooked in the oven-when she fries a chicken she saves a piece or two and cooks them in the oven in a little water, lets it cool and takes it off the bone then freezes it in the cooking liquid. When she gets enough saved up she makes chicken & dumplins) let it get good and hot. Then she makes a batch of her home made biscuits (love her biscuits) dough cuts it into chunks and adds it to the chicken and liquid in the crock pot. In using the crock pot you don't have to stir so you don't break up the dumplins. When the dumplins are ready stir it a little bit then when serving it up dig deep to get some chicken meat with your dumplins. Dam I just made myself hungry!
 
I LOVE chicken n dumplings and also homemade chicken n noodle soup. Unfortunately, most home-style cooking restaurants around here confuse the two and their chicken n dumplings taste like chicken n noodle soup. That's why I never order chicken n dumplings when we go to such a restaurant! Both my grandmothers made wonderful dumplings, but they were slightly different. Mom's dumplings were wonderful as was her chicken n noodle soup. My wife makes chicken n dumplings almost exactly like my Mom did, but my mother-in-laws dumplings tasted like chicken n noodle soup! I guess restaurant chicken n dumplings are like a box of chocolates.....you never know what you're gonna get! :wink: :lol:

And my wife. True to form I asked what the heck these were. Wish I could keep my mouth shut sometimes.

Anyway, in Calhoun county, Illinois they make dumplins like pasta dough. I didn't know that. In central Illinois dumplins are mixed in a bowl and spooned out to the broth to cook in clumps. The flat ones were really good. Just unexpected. Guess I will never get those again.

Gramps,

Add a can of Campbells creams of chicken soup to your receipe. Makes a great gravy. Thickens it up.
 
My wife made chicken and dumplings today. She makes her dumplings from scratch with Bisquick mix. They are round and very light and fluffy. Our granddaughter even remarked how good they were. She uses a recipe from my mom's old green Watkins Cook Book that she got when she got married, back in 1942.

That's how they make them here in south Jersey, the kind I grew up with. Always knew it as "chicken pot pie", apparently a controversial name. My wife insists that chicken pot pie is what I always knew as chicken pie - chicken, veggies and gravy baked in a pie shell. Not in my world!

When I was a kid, my favorite was lima bean pot pie - the same 'flat' dough, but with limas and bacon, swimming in gravy. Mom used to make whatever I wanted on my birthday, and it always was either that or shepherds pie.

Grew up in the Great Pacific Northwest. Grandma made homemade chicken noodle soup and the noodles were rolled out like a pie crust and then cut into strips for the pot. I sure miss her. What a woman. Dad is with her now. Sure would be nice to sit down together and enjoy some of that soup again.

Hi,

My mother spent most of her formative years in KS. Dunno who taught her to make dumplings--my Granny made 'em that way, too, so I'm guessing either she or Great-granny was the teacher--but that's the only way I knew they were made until recently.
