We Smoke/BBQ BEEF Brisket and grill steak and hamburgers. And we don't eat pig, well maybe sometimes but we sure don't advertise it. :D :D
Looks to me like that steak is a dinner for ONE. :wink:

That’s some good looking grub Jim. And yeah, we don’t eat much pork.

My wife showed that picture I posted because I’m finally fed up with my current grill and am looking for another... Besides, since she isn’t traveling we have more time to cook outback these days. She’s liking my bbq more and more.

Plus it doesn’t help when you post pictures of that nice smoker you have. :D I’m actually thinking about a Lone Star Santa Maria grill. I’m not sure if I want one of their smokers, since we grill more than smoke.

I did email them and they are working these days. Which is nice to hear.

This is the one I was going to order yesterday, but sad to say none in stock since Napoleon is shutdown. I have had my existing Napoleon Prestige Grill for 21 years and used it a lot but it is getting a little tired. So time for a new one. I like a gas grill that you can add wood chips to or use charcoal in it with add-ons.
This one fits the bill.

If it ain't charcoal it ain't BBQ. I'll let wood (not pellets) pass, but gas or (gasp) electric just doesn't do it. Half the battle is knowing how to control the heat for our desired outcome.

Yep back when I was younger I used to go to the woods and chop down a tree that I then drug to the house. Got the fire started by rubbing two sticks together. A lot of the time when I didn't want to walk 10 miles up hill both ways to get wood I would pick up Buffalo chips to cook with. Gives a new flavor of smoke to the meat. :wink: That is Buffalo S$it for you West Coast people. :D
Now that Texas got civilized I use gas that comes in a nice little white bottle when I want to eat the same day. I still use wood for the Cow that needs to smolder for a long time, That is what the smoker is for.
Just to be clear BBQ is done in a smoker. Grilling is done on a You Guessed it, on a grill.
OK Class lets go smoke something :D

One thing about living on in an airpark you know and are friends with all your neighbors. Which means we don't need much of an excuse to cook and eat. :D :D

I've never tried smoked carp, but I used to live up in Northern MN, and the restaurant I worked at made smoked Walleye all the time. In my ever so humble opinion, Walleye is the absolute best fish for eatin'.

I cant afford Lobster in the super markets; not even the small "tails" they sell.
 
I was raised in Wisconsin. In 1962 I did six months on the state conservation dept assigned to the fishery's division.
I did stuff like rough fish removal, (carp), tagging sturgeon, research by netting, shocking, checking catch's etc.
They would always lay off us newbys at the end of six months or they had to hire us as permanents. When I got laid off the boss wanted me to come back in a few weeks and do another six months with the wardens. Something else that appealed to me came up so I didn't go back. Kind of wondered what my life would have been like had I.
Your right. Walleye`s are good eating!
