Texas BBQ Brisket Rules

I haven't eaten in Central Texas since 2007, what happened to County Line? They were pretty good.
There was also a BBQ joint in Llano, right at the main intersection, good BBQ.

When I left TX in ‘17, County Line was still there. Took staff there a couple of times for BBQ, and of course, they loved free food. Food was ok, not great. I did like their day-old bread. You could buy a loaf for $1.

A small world for sure. DIL is from Lulling and one of her relatives owns part of City Market.
Their BBQ is outstanding and their sauce is the only one I will use. We can't even get the recipe for it.

Been to CM a couple of times. Bought sauce there too. They have an online store.

Rudy's fell into the same trap as many other restaurants: expansion killed the quality. In Rudy's case, their barbeque chefs stopped spending sufficient time to properly smoke the brisket, and Rudy's accountants shaved pennies by buying lower quality beef. These factors, in combination, resulted in less flavorful, drier brisket. Today, I can buy Rudy's quality brisket anywhere...and that's their problem.

Morale of this story: Trying to please everyone produces the exact opposite result.
