Last year, we remodeled our kitchen, and I thought a new kitchen knife would be necessary. Made sense to me at least. Here it is! I ordered this knife from Matthew Lesniewski, at http://www.ml-knives.com/ He seems like a really great guy. Very easy to work with. This is my third knife from Matt. My first one is the same style but with a Tiger Maple handle. Then I have one of his pairing knives too. Both have been great in the kitchen.
The thing I like most about this knife is the width. It is 2 inches wide. For me, it makes cutting tall stuff, like an onion, much easier. I also like the up-curve at the tip of the blade. It makes rocking the blade back and forth on a cutting board easier.
This one has a Hickory Handle.
