Is there any value on original Ruger holsters with the "flap" that covers the entire revolver? I have 2. Is there any call for them? If so, what should I ask?

Yes there is demand for them, price depends on condition and what they fit...$50 to 100 or so if they are Bianchi made.

These have the original Ruger eagle stamp mark. How do I know if they are Bianchi?

Look on the back of the holsters. If they say; "Made for Ruger by Bianchi" they are the real deal. Plus, the real ones will have a model & barrel length stamped on them.
