Does anyone add cream style corn and jalapenos to their white corn meal cornbread?

What additives to you incorporate into your cornbread?

Is cornbread made from pound cake mix still cornbread?

Do you use traditional molds, cast iron, or another piece of cookware for your cornbread?
 
Have had CB infused with white & yellow corn, jalapenos, onions, or combos of these. CB might be a blank slate to a point. Can think of a few items that might fit, many that wouldn't
 
I’m not afraid to eat a sweet cornbread, I was raised on Jiffy boxed mix my mother made, hell she added a spoonful of sugar to it. Y’all ready to fight about my mom’s cornbread?

Me? I’m putting fresh Jalapeño in mine and I’m not using a box mix most times. I’ve done cracklin’s too though I rarely have them. Do I get some backwoods cred if I tell you I’ve used Black Bear cracklin’s in cornbread! I highly recommend it too.

Always homemade. It's ridiculously easy!
Not a big fan of Jalapeños in my cornbread, but if I want to spice it up, I add a teaspoon of ground Cayenne pepper.
50% of the time, I'll cook three strips of bacon up good and crispy, dice it up and mix it in the batter.
Always bake mine in a 10" Griswold skillet that's been in my family for a LONG time.
 
Sometimes my mom would make what she called Mexican spoon bread. It was similar to corn bread but had a slightly different texture if I recall correctly. She would put corn & other stuff in it.
Cake isn't corn bread.
We always put greens, beans, or other vegetables over cornbread. The pot likker made it good. We also used to come back the next day & crumble up leftover cornbread in milk & eat mush. If we didn't have anything sweet in the house dad would take cornbead & put corn syrup & butter on it. Almost too sweet.
 
Wife makes cornmeal flapjacks when we have soup beans. The meal, milk & egg, no sugar. Just as it leaves the skillet smear real butter all over it. We've both nearly ruined our appetit eating it that way before we even get the beans poured over it.
If I hadn't grown up with it I might turn my nose up at some of it, but I just love down home country cooking.

So a little corn squeezing with a bit of cornbread, what do you pair with scrapple?
 
I prefer sweet cornbread so I dd brown sugar... I sometimes use jalapeno's, or usually the juice from the jar.... same with my biscuits. all made from scratch, but it must be made in a dutch oven in the wood stove
 
White Lily self rising white corn meal, one egg, buttermilk...that's it. Mostly I fry mine in snow cap lard, but when I bake it, I coat an iron skillet with lard, and preheat it while the oven is coming up to temp (450F) so the bottom browns good then pour in the mix.....
Corn bread ain't rocket science. If ya like cornbread, it don't need any additives and it surely don't need any sugar, fruit, or vegetables. After all, we ain't baking a cake here. Such shenanigans would get you run out of the kitchen at my Mother's house..LOL.

I enjoy almost all cornbread. Yellow, white, sweet, buttermilk cornin it, no corn and if I have to peppers in it. Most of the time I make Jiffy Mix sweet cornbread muffins and everyone likes that. I really, really like my Grandmothers Hillbilly buttermilk cornbread (not sweetened) baked in a pre-heated cast iron skillet with sizzling bacon grease in it! It's what the Confederates carried in a shoulder pouch as their days rations on the run! It's good stuff to me but no one else in my family likes it. I have it every once in a while but since I'm dieting, this high carb deliciousness isn't diet friendly! Good stuff though!
 
In WNC no one knows how to make cornbread anymore, I grew up in SC, cornbread shouldn't taste like birthday cake. The last time Paula and I made cornbread, we were out of regular flour so we substituted "self rising flour", best cornbread we ever made in 51 years of marriage.
