For the benefit of those of you who asked for it, here it is:
Mattie Redd's Karo Pecan Pie:
(As made by her daughter, Nita Wright)
(T. is for teaspoons.)
3/4 Cup Sugar
1/2 T. Salt
1 1/3 Cup Karo White Syrup
2 Eggs, beaten
1 1/2 T. Nutmeg
1 1/2 T. Allspice
1 1/2 T. Vanilla
1 1/2 T. Butter
3/4 Cup Pecan Halves
One Deep Dish 9" Pie Crust
Mix sugar, salt and Karo syrup. Blend in eggs. Then add nutmeg, allspice, and vanilla. Add butter and pecans. Pour into uncooked pie crust and cook at 375 degrees for about thirty-five minutes. Pie is done when it shakes in the middle.
Mrs. Redd was born in March of 1912 in Harrisburg, Arkansas, and died in Memphis, Tennessee in November of 2012, age 100 years old.
