Japanese Chef's Knife

My wife had some business meetings in Tokyo, Japan last week. She bought me a chef's knife. It's just stunning. She said there is a neighborhood in Tokyo where all the little knife shops are located, so it's easy to go from one store to the next. They have all the knives on display and if you want to see one, they have store display models you can actually use to try out. They have different things to cut, things all the way from plastic water bottles, to potatoes. They showed her how to hold the knife and explained the different steels. I guess I'm going to have to go with her sometime.

This one is SDK stainless. I'm not sure which SDK specifically, I see they have different grades. And honestly, I don't know enough about knife steel.

Anyway, the packaging of this knife is so very nice as well. But overall it's a lightweight knife, and the steel flows absolutely perfectly into the wooden handle.
