Fried okra is OK, but eggplant is better used in the hog trough.

I've never seen a recipe for turning eggplant into bacon before. Well done!

When dad or grandpa would butcher a steer or hog, grandma would serve fried brains for breakfast. Other favorites were gooseberry and raisin pies. Also fried chicken fried with lard in an iron skillet.
