"Fitting" stag grips

Hey folks, I found a pair of Ajax stag grips for my current production Colt SAA that actually come close to fitting. A little too much meat in some ares but very do-able. I do however need a bit of advice as to how to go about "fitting" the stag. Any pointers/tools needed/tricks of the trade etc. would be greatly appreciated. Thanks
