A little BBQ this weekend

Every April I help BBQ for my wife's company who participates in the March of Dimes walk here in Dallas. This year it was at a different park in Dallas, closer to downtown. It turned out to be nicer because there was a bridge and we set the grill up under the bridge since it was supposed to rain. The pig was 100 pounds, and there were 16 briskets. They were smoked overnight on Thursday and then held hot until lunch on Saturday. We get them out overnight on Friday and slice them up. They are still unbelievably hot even by lunch on Saturday. Then the ribs and sausages. Nothing green and no vegetables, just beans cooked up with some ground beef. We always have a prime rib for a midnight snack, this year it was 7 pounds and it all got eaten.

The pig just after flipping him over. He was cooked in one of those "La Caja China" cookers. It replicates cooking him in a hole in the ground without having to dig the hole. He cooked for almost 12 hours.

I'm looking for another couple pictures of the overall setup. It's pretty impressive. This was my fifth year helping out, and it's just so much fun. We feed several hundred people at least probably above 300.

Thanks for the comments. It was pretty great food. Even my wife who doesn't normally eat BBQ loved it.

I got home and left some clothes on the front porch, then in the middle of the night a possum or something else came up and chewed some holes in a pair of gloves, must have had some meat aroma still on them. We couldn't figure out what the dog was barking at through the doors.

Those are some great pictures and fine looking vittles! We picked up a couple of pounds of BBQ Saturday for a few meals here. Little hole in the wall place in Mexia where you can get some wonderful brisket.

I'm totally embarassed all we did this weekend was grill some prok chops and burgers - even used the propane grill cuz I was lazy.
