Do all convertible cylinders have the last three numbers of the serial engraved on the face?

As far as I know that has been the norm. Of course I'm sure there have been a few Vaquero Convertibles that have gotten out without one or both cylinders marked.

I can see were a collector would end up with a lot of cylinders kicking around. Putting the wrong my one in the wrong gun could be catastrophic. Makes a lot of sense to have them all marked.

I have Blackhawk convertibles that are marked, just noticed my 32/32-20 Vaquero is not.

Most mine are hand engraved on the front of the cylinder. I also went to a "container store" and bought small plastic jars for them I could label.

I have several convertibles. All cylinders are marked with the last three numbers of the SN from the factory. One exception is a .45 ACP SS cylinder I purchased online and found it to be a perfect fit to one of my stainless Ruger Bisley BH's.
That reminds me, I need to dig it out and go shoot it !
