On our way to church this morning, we (Nita and I) drove past Second Presbyterian Church of Memphis. A very active church with many ministries, there was a sign posted near the street advising of some upcoming class.

Now the sign maker was probably more hep than I, for he abbreviated Second Presbyterian as "2PC".

My first thought was fried chicken, a Baptist tradition.

Well I have been asked white or dark in the past. White is more money and less taste.

My wife used to only likes boneless, skinless breast...........yuck.
I introduced her to deboned legs and thighs a few years ago.
Now 50% of chicken she buys is bulk packed thighs or legs.
Of course I debone them myself.
After tasting the deboned junk parts she admits the meat is juicy and extra yummy.
Chicken and dumplings are made with dark meat round here now.

Growing up I would eat the breast last as it has little flavor.
